Naturally Balanced Philosophy
Peter Vaughan had a classical culinary training and has worked in Michelin star restaurants but has also taken an interest in the fact that food is fuel for our bodies. Having studied nutrition and herbalism he has developed his own style of ‘naturally balanced’ cooking using what he calls ‘body friendly’ foods. It was this combination that attracted the producers of various television programmes such as The Diet Show, The Pulse, Only Organic, The Dinner Doctors etc. This philosophy is carried through into all aspects of the business:-
Food and Drink
- Local Produce
- Humanely reared chicken, salmon, beef and other ingredients
- Unrefined ingredients
- Fairly traded/ethically sourced items
- Nutritionally sound food combinations
- Exciting balance of tastes and flavours
- Interesting textures
- Appealing presentation and colour blends
- Tasty, delicious dishes that ‘tickle your taste buds’
- Wine, apple juice and beer from local producers
Reducing Waste
- Local produce equals less packaging and fewer food miles
- Recycling bins for glass, paper (including napkins), cardboard, metal etc
- Wormery for recycling kitchen waste
- Reusing plastic, glass and metal containers
Water Treatment
- Removes chemicals and heavy metals
- Minimizes use of cleaning products with high chemical content
- Reduces lime scale build up saving energy and extending life of appliances
- Provides excellent tasting tap water for customers
Other Things
- Place mats made from recycled newspapers by a women’s co-operative in The Philippines that is helping them to work their way out of poverty www.fair-grounds.org.uk
- Environmentally friendly Daikon air-conditioning and heating units
In recognition of all that this small business does towards looking after its customers and the planet, in 2009 it received this award:
